"That was pretty smart of you to have your jailers come to the Inauguration and all of that, but let me ask you something… didn't you really hate them for what they did?"...

Nelson replied...

"Oh, yeah, I hated them for a long time. I stayed alive on hate for 12 years. I broke rocks every day, and I stayed alive on hate. They took a lot away from me. They took me away from my wife, and it subsequently destroyed my marriage. They took me away from seeing my children grow up. They abused me mentally and physically. And one day, I realized they could take it all except my mind and my heart."

He paused and then he continued...

"Those things I would have to give to them, and I simply decided not to give them away."

And so I said to Nelson...

"Well, what about when you were getting out of prison? The day you got out of prison in 1990, it was Sunday morning, and I got my daughter up early in the morning, and I took her down to the kitchen, and I turned on the television, and she was just a little girl then, and I sat her up on the kitchen counter. And I said, 'Chelsea, I want you to watch this. This is one of the most important things you'll ever see in your life.'"

"I watched you walk down that dirt road to freedom. Now, when you were walking down there, and you realized how long you had been in their prison, didn't you hate them then? Didn't you feel some hatred?"

Nelson replied...

"Yes, I did a little bit. I felt that. And frankly, I was kind of afraid, too, because I hadn't been free in so long. As I felt the anger rising up, I thought to myself, 'Nelson, They have already had you for 27 years. And if you keep hating them, they'll have you again.' And I said myself, 'I want to be free.'

And so I let it go. I let it go."

Sunday sprout day! Gettin the green on

Good morning green juice!

I was in a rush this morning, threw it in a blender then strained it off. Great solution to not having time to clean the juicer and Bonus! You get a little of that fiber to go. Yum! The count down is on to our Vermont retreat! Looking forward to sharing tips like this and more on how to stay green in a busy world!

Dear Liz,
While belated, I could not allow the entire Summer to pass without properly thanking and commending you two on a spectacular retreat this past June. For me it was a dream vacation - between the deep, technical Bikram instruction and practice, to the unbelievable meals ( and desserts! and juice!), to the deep relaxation and camaraderie provided by the location and fellow yogis. It was truly a spectacular - a chance top deepen and improve my practice, relax and kickoff Summer in a healthful way. I as you know, I plan to be back! Thank you again for all you do to make these retreats magical.

Mmm... these may go great with our raw veggie burgers in OCTOBER.

RAW!! Onion Rings

Almond Milk:

1 C soaked almonds
4 C water
  • Combine soaked almonds and water in blender. Strain through nut milk bag. Save the pulp and dehydrate it.
Onion rings
1 large sweet onion
4 cup almond milk
3/4 cup almond milk pulp
1 cup ground fax (3/4 cup before grinding)
1 Tbsp smoked paprika
1/2 tsp ground chipotle
1/2 tsp salt
  • Slice onions and place in a ziplock bag with almond milk. Soak while pulp is dehydrating.
  • When pulp is done dehydrating, place in food processor with flax, spices and salt.
  • Separate into two batches. If you use all of it at once, a lot of it will be come saturated and too wet to use.
  • Splitting it into separate batches protects against waste. Drain onion rings, RESERVING milk.
  • Dip onion ring in the milk, then in the almond flax mixture, dip in milk once again and then in almond flax mixture again to get a heavier coating.
  • Dehydrate for 6 to 8 hours until almost dry.
  •  You want the onions to retain a little moisture, the breading should be dry.

Keepin it SUMMER COOL in the HOT room

1. Hydrate! Hydrate! Hydrate!  And not just H2O.  Make sure you are drinking things high in electrolytes including coconut water and even the occasional Gatorade.

2. Take advantage of the fresh fruit available in the summer.  Things like watermelon, cantelope, honeydew, and grapes.  Not only eating them, but you can buy fresh squeezed fruit and veggie juices.

Creamy Citrus Dressing: Recipe for Sunshine!


So here in VT we are battling some Spring thunder storms, crazy weather patterns and even a call for hail tonight – it’s enough to make anyone yearn for warm weather. Luckily, I KNOW Spring sunshine and Summer are right around the corner! Which means time to lighten up, slim down, boost your energy!

Now, before you roll your eyes at the word, “salad,” try this raw vegan recipe for SUNSHINE salad dressing below. It’s SUPER simple, requires only a couple of minutes and a blender, and packs a powerful punch (especially with the jalapeño – but you don’t have to add it if you don’t want to)!

Creamy Citrus Dressing

1 small avocado, peeled and pitted
1 cup orange juice (freshly squeezed!)
1/4 plus 2 tablespoons lime juice (also freshly squeezed!)
1 handful cilantro
1 green onion, white and 1 inch of green, coarsely chopped
1 tablespoon chopped shallot
1/2 small jalapeño
1/2 teaspoon sea salt
1/2 cup olive oil
Freshly ground black pepper
In a blender, add the avocado, orange and lime juices, cilantro, green onion, shallot, jalapeño, and salt and blend until smooth. With the blender running, slowly pour in the olive oil, allowing it to emulsify for a thick, creamy consistency. Season to taste with pepper.
Makes 2 1/2 cups
Pour over a big bowl of fresh greens, top with sprouts, nuts, or whatever you’re craving!

Season, roll, wrap and chill ...

Stage 2 raw nut cheese culturing...

Pressing excess liquid with a weight.. Ball jar filled with water. You want something heavy but not so heavy it splits the cheesecloth
