"HEALTH IS WEALH; PEACE OF MIND IS HAPPINESS; YOGA

SHOWS THE WAY."

Raw & Vegan - hot chocolate...

I know..I know!!!  from salty to sweet, but some weeks that is just how it goes.... If I can not be in the sunshine Puerto Rico or the hot springs of California yet my little cup o love will tide me over... AND Raw chocolate actually has some good health benefits, including a boatload of antioxidants.

Now, I know what else you are thinking -  raw food and drink are by definition, not allowed to be hot, that doesn’t mean that you can’t still make a warm drink to thaw out your icy fingers. 

If you don’t care much about 100% raw but are enjoying a healthier version of the ol' standard, you can heat it up to your preference.

The Mylk (serves 2):
  • small handful of nuts (ie: almond cashew or hazelnut)
  • 1 cup of filtered water *This is to make the nut milk, alternatively you can just use a cup of nut milk you have on hand
The goods
  • 1 tsp vanilla
  • 4 tbsp raw cacao nibs OR 3 tbsp raw cacao powder
  • 2 tbsp grade B maple syrup (Grade B has more minerals! add onlyto taste)
  • 2 cups filtered water

What to do:

  • If you are using cacao nibs, you’ll have to grind them into a fine powder. We use a coffee bean grinder, but a regular ol’ mortar and pestle would do the trick. Whatever you have on hand, but it has to be a very fine powder.
  • Mix the nuts and the water in your blender (skip this and the next step if you already have nut milk on hand).
  • Filter the nut milk in a nut milk bag (I use a clean mesh paint strainer - but cheese clothin will also do! If you skip this step, your drink will be grainy and not as enjoyable)
  • Pour the nut milk back into the blender & add the cacao powder, vanilla, & maple syrup. Blend on high.
  • Meanwhile, heat up the filtered water in a kettle or on the stove. You can better control the temperature by doing it on the stove.
  • Pour your nut mylk cacao mixture into two cups, they should be about 1/3 to 1/2 full. No more than 1/2 or you won’t get very warm chocolate. It might take once or twice before you get the measurement right for your cups.
  • Fill the cups with your now warm or hot filtered water, whatever your preference. Remember you are mixing a room temperature liquid with the hot water, so it’s not going to be as hot as if you just boiled the kettle.
  • The benefit is that it’s still nice and warm, and you don’t have to wait 5 minutes for it to cool off before you can drink it. And you are going to be drinking up all those delicious antioxidants while they are still useable.
  • Make sure to stir with a spoon before drinking.
Tip** If you just can’t seem to get the measurement right and are always coming out with not enough or too much cacao mixture before you add the hot water, try starting out by measuring your nut milk in the cups. Pour the right amount of nut milk into the cups, and only use this to make the cacao mix. It takes all the guesswork out of it.

Salt can be a controversial subject for those who are taking care of our health. It gets a bad rap most of the time. Doctors tell us to avoid it, and some of us listen. However, what those doctors usually don’t mention is that there is a big difference between regular old table salt and sea salt.
But before looking more closely at salt, it’s important to understand why salt is a necessary part of our diet.
• Salt provides sodium, which is necessary for life.
• It helps with muscle contraction and expansion, nerve stimulation, the proper functioning of the adrenals, and other biological processes, as well.
• Salt also provides chloride, which helps produce acids necessary to digest protein and enzymes for carbohydrate digestion, and is necessary for proper brain functioning and growth.

The morning after...

Thanksgiving and what is the plan? Feeling a bit sluggish, tummy still full?

Well the way you start each day is incredibly important and the way you start a day where perhaps you had foods you are not used to, or more than you are used to.... this little ritual will get you back feeling balanced.

And, IT IS SO EASY.... 

What you do first thing in the morning matters SO MUCH and as we head into the holiday season lets together try to start the day by focusing on a plan that works with resetting the clock and natural rhythms of the body. It will keep us regular AND healthy..If you can only make time for one ritual that will improve your health, let it be this.....

Start the day out with a mug of warm water and the juice of half a lemon.

It's so simple and the benefits are just too good to ignore. This little trick:

 
1. Aids digestion

The warm water serves to stimulate the gastrointestinal tract and peristalsis—the waves of muscle contractions within the intestinal walls that keep things moving. Lemons and limes are also high in minerals and vitamins and help loosen ama, or toxins, in the digestive tract.
2. Boosts your immune system 

Lemons are high in Vitamin C and potassium. Vitamin C is great for fighting colds and potassium stimulates brain and nerve function and helps control blood pressure.

3. Balances pH

Lemons are an incredibly alkaline food, believe it or not. Yes, they are acidic on their own, but inside our bodies they're alkaline (the citric acid does not create acidity in the body once metabolized). As you wellness warriors know, an alkaline body is really the key to good health.

4. Helps with weight loss

Lemons are high in pectin fiber, which helps fight hunger cravings. It also has been shown that people who maintain a more alkaline diet lose weight faster. And, my experience is that when I start the day off right, it's easier to make the best choices for myself the rest of the day.

5. Acts as a gentle, natural diuretic

Lemon juice helps flush out unwanted materials because lemons increase the rate of urination in the body. Toxins are, therefore, released at a faster rate which helps keep your urinary tract healthy.

6. Clears skin

The vitamin C helps decrease wrinkles and blemishes. Lemon water purges toxins from the blood which helps keep skin clear as well.

7. Hydrates the lymph system

This cup of goodness helps start the day on a hydrated note, which helps prevent dehydration (obviously) and adrenal fatigue. When your body is dehydrated, or deeply dehydrated (adrenal fatigue) it can't perform all of it's proper functions, which leads to toxic buildup, stress, constipation, and the list goes on. Your adrenals happen to be two small glands that sit on top of your kidneys, and along with your thyroid, create energy. They also secrete important hormones, including aldosterone. Aldosterone is a hormone secreted by your adrenals that regulates water levels and the concentration of minerals, like sodium, in your body, helping you stay hydrated. Your adrenals are also responsible for regulating your stress response. So, the bottom line is that you really don't want to mess with a deep state of dehydration!

The recipe is really simple—a cup of warm (not hot) water and the juice from half a lemon.

BOSTON CELTICS Brandon Bass isn’t afraid of breaking a sweat … in the yoga studio

The Boston Celtics power forward has been taking bikram yoga classes for the past three years. His nutritionist recommended the exercise, in which a room is heated to over 100 degrees, while he was playing for the Orlando Magic.

Bass he has stuck with it since joining the Celtics. He credited yoga for helping him to bounce back from knee injuries last season.“I go twice a week for 90 minutes,” he told CSNNE.com. “I find that it’s good for lengthening, strengthening, and balance. My nutritionist [got me into it]. I thought he was crazy because it was hard – very hard – my first time. But it’s a mental thing so I just got used to it and now it’s easy.”
Now in his eighth NBA season, the 27-year-old is mindful of how he takes care of his body, which includes carefully selecting the foods he consumes. – and he also drinks fruit or vegetable blend drinks. Is there anyone out there who doesn’t love a good makeover?

Of course not!

Today as we set out on THANKSGIVING WEEK lets see how we can keep ourselves on track, enjoy some amazing food, still feel good come Saturday and give that kitchen a bit of a makeover!.

20* and crispy outside, I set out to make a vichyssoise, the classic, and very simple, leek and potato soup, but figured lets give it a healthy update. We are going to do this by replacing the regular potato with sweet potatoes, upping the antioxidants, beta-carotene, and vitamin C. Sweet potatoes keep you fuller for longer than a regular potato, and you won’t want to take a nap after eating them!

This soup gets its velvety texture from beans instead of dairy. This is a great technique when making blended soups because beans add so much creaminess without the high fat content, plus you get an extra hit of filling fiber.


Topped off with crispy, roasted, Ginger-Kissed Pumpkin Seeds, this Sweet Potato Vichyssoise is the updated autumn classic that will warm your belly and your heart. Here’s the recipe, we hope you enjoy it!





Sweet Potato VichyssoiseServes 4-6
• 3 leeks
• 5 cloves garlic
• 4 medium sweet potatoes
• 6 cups vegetable broth
• 1 cup cooked white beans (cannellini, navy, butter…)
• knob of coconut oil, ghee (clarified butter), or butter
• 1 Tbsp olive oil
• juice of 1 lemon
• 1 tsp. sea salt
• 2 tsp. turmeric (optional)
• cayenne to taste

what to do:
• Prepare leeks by removing the very tip of the root, and the tough, dark green parts at the very top. Chop leeks, then swirl them around in a large bowl of water to remove any dirt (due to how they grow, leeks can have a little grit between their layers).
• In a large stock pot, heat a knob of coconut oil or butter, add turmeric, cayenne and leeks with a teaspoon of sea salt. Stir to coat and let cook on medium heat for five minutes or so, until leeks have softened. Mince garlic and add to the pot.
• Scrub the sweet potatoes, and chop them into rough cubes (leave the skin on!). Add them to the pot, stir and cook for a few minutes. Add broth and beans. Bring a boil, reduce to simmer and cook until sweet potatoes are soft, about 15 – 20 minutes.
• Using a regular blender or stick blender puree the soup until totally creamy. Add olive oil and lemon juice, plus salt to taste if necessary, blend once more and serve with Ginger-Kissed Pumpkin Seeds.


Ginger-Kissed Pumpkin Seeds
Makes ½ cup
• ½ cup pumpkin seeds (pepitas)
• ½ Tbsp. olive oil
• ½ Tbsp. maple syrup
• 1 Tbsp. ginger powder
• pinch sea salt


*** if you want to skip the ginger and maple syrup these are great just toasted with a little olive oil and sea salt too!

what to do:
• Preheat oven to 300°F / 150°C.
• Toss pumpkin seeds with other ingredients. Place on a baking sheet and roast in the oven for 10-15 minutes until toasty and fragrant. (you can also do this step in a large frying pan on the stove - just toast them until they pop a bit. YUM!) Remove and let cool. Store leftovers in an airtight container

Piña Coladas  are the official beverage of Puerto Rico....and I thought that I would share with you a lightened up version that you can slurp down whenever! Typically made with coconut creme, pineapple juice, and rum–these tropical beverages can be super high in calories. To make them lighter, I removed the coconut creme and replaced it with coconut milk, added frozen bananas, and said adios to the rum ( for now..) . YUM

Vegan Piña Colada Smoothies

1    cup fresh or frozen pineapple chunks
1    cup RAW coconut milk

1/4  cup raw coconut meat (young thai)
* you may not be able to find this ingredient but most times you can at Whole foods. it is still good without it... this just makes it creamier!
1 large frozen banana (chunks)
1/2 cup ice cubes


Directions
  1. Place pineapple chunks, banana, coconut milk, and ice cubes in blender. Puree until smooth and creamy. Pour into two glasses.
  2. Top with pineapple for garnish, whip cream (vegan), or drizzle with honey.

This salad is satisfying and just what the docotor ordered after you feel yourself slipping from your Summer regime!  A simple meal that comes together in a snap, filling and full of the bright flavors against the rustic crunch of cabbage and nuts, this salad easily accommodates whatever ingredients you have on hand... so go ahead, defy seasonal urge to feel heavy and sluggish! Vietnamese Chopped Cabbage Salad
1 packet 'sprouted' organic tofu, (wildwood brand is the best!) http://www.wildwoodfoods.com/products/meat-alternatives/tofu/water-pack/wildwood%C2%AE-sproutofu%C2%AE-extra-firm-water-pack
1/2 head cabbage, finely shredded
1 small bunch green onion, sliced thin
1 handful cilantro leaves
1 handful mint leaves
1/4 c. toasted nuts (almonds, peanuts, or pecans) chopped
1 apple, julienned
2-3 radishes, sliced or julienned
juice of 1 lime
4 Tbs. grapeseed or sesame oil
1 Tbs. soy sauce
3-4 Tbs. fish sauce (optional)
1 tsp. siracha chili sauce (substitute chili flakes or tabasco sauce)
2 Tbs. rice wine vinegar
pinch brown sugar or honey

Season slice, season the tofu with salt/pepper and grill/saute. Allow to rest before cutting into strips. Combine cooled tofu, cabbage, onions, apple, radish, cilantro, and mint in large bowl. Whisk lime juice, oil, soy sauce, fish sauce (optional), chili sauce, vinegar, and sugar together in small bowl. Taste and correct seasoning. Toss nuts and dressing with salad in large bowl until well combined. Serve topped with additional herbs and toasted nuts if desired.

The Bikram 30 Day challenge ---- and I get what?

So, feeling a little sluggish already? Want to get a jump on that Thanksgiving day feast? Why not start a yoga challenge! Why not treat yourself to a trip to Puerto Rico with us after you finish?!...sounds good to me!
A common practice at hot yoga studios around the world is the “Bikram yoga 30 day challenge” and it’s pretty much what it sounds like — 30 days of hot yoga in a row. Most studios will allow you to do a double (two classes in one day) if you happen to miss one, so there’s usually nothing to worry about it if you miss a class here or there (easy)...

Many of us think we couldn’t possibly do hot yoga for 30 days in a row, but even within the first few days, we find strength, determination and passion that previously didn’t exist. Committing to this challenge allows for the possibility of discovering something about ourselves — that we are much more powerful and capable than we would have imagined.
Another major benefit of the 30 day challenge is how much it brings out buried problems, allowing us the opportunity to work through them. Previous injuries surface with this kind of consistent practice, giving us the chance to heal and break through old problems long stuck in the body.
Having a goal of taking 30 classes in 30 days really encourages you to stay active every single day. All you need to do is focus on the emotional reward of completing your thirty days, but mindful of the benefits you’ll receive along the way… extra energy, better sleep, increased flexibility,  A HOT YOGA BODY to show off in Puerto Rico (lol) etc.... no but seriously,  It contains all the myriad ways hot yoga benefits us, but so much more when concentrated into a 30 day challenge!

Sprouts sprouts sprouts...

What an amazing day we had hanging out with the directors of The Ann Wigmore Inst. here in Aguada Puerto Rico. Joining forces with them has been such a joy in preparing for our February retreat down here. After a short tour and several shots of wheat grass we set a plan in motion where they will be starting our sprouts to make life easier on the road and your retreat meals full of life and vitality. Airplane yoga? - Ya of course...

Don't ya just hate that all balled up, swelled up feeling you get from being on a plane? Isn't the best thing after a trip - your very next Bikram Class? Sure is!!  If you are like me, I plan my trips then locate the nearest Bikram studio so I am sure to have a great time and feel great wherever I am.
