Creamy Citrus Dressing: Recipe for Sunshine!

 

So here in VT we are battling some Spring thunder storms, crazy weather patterns and even a call for hail tonight – it’s enough to make anyone yearn for warm weather. Luckily, I KNOW Spring sunshine and Summer are right around the corner! Which means time to lighten up, slim down, boost your energy!

Now, before you roll your eyes at the word, “salad,” try this raw vegan recipe for SUNSHINE salad dressing below. It’s SUPER simple, requires only a couple of minutes and a blender, and packs a powerful punch (especially with the jalapeño – but you don’t have to add it if you don’t want to)!

Creamy Citrus Dressing


Ingredients:
1 small avocado, peeled and pitted
1 cup orange juice (freshly squeezed!)
1/4 plus 2 tablespoons lime juice (also freshly squeezed!)
1 handful cilantro
1 green onion, white and 1 inch of green, coarsely chopped
1 tablespoon chopped shallot
1/2 small jalapeño
1/2 teaspoon sea salt
1/2 cup olive oil
Freshly ground black pepper
In a blender, add the avocado, orange and lime juices, cilantro, green onion, shallot, jalapeño, and salt and blend until smooth. With the blender running, slowly pour in the olive oil, allowing it to emulsify for a thick, creamy consistency. Season to taste with pepper.
Makes 2 1/2 cups
Pour over a big bowl of fresh greens, top with sprouts, nuts, or whatever you’re craving!
